Easy One-pot Cauliflower Fried Rice That Is Perfectly Keto

For those that embrace the keto lifestyle but can’t live without rice, cauliflower fried rice is a game changer. 

This Healthy Cauliflower Fried Rice recipe is loaded with greens and tastes just as good as any Asian-style fried rice.

The best part of the cauliflower fried rice is that you can throw in literally anything (as long as it’s low-carb:)). 

If you are like me whose mind is never clear without a clean and organized fridge, this recipe will help you to utilize all the leftovers.

This cauliflower fried rice contains 6 grams of net carbs and counts for 148 calories per serving. It makes a great one-pot dinner or a weight-watcher meal as well.

Make the recipe work for you

Because of the fibre in the vegetables, a serving of this version of cauliflower fried rice should keep you full for a long time. But it might not be necessarily high fat by itself because I have roasted duck in my meal to go with it.

So if you are planning to make it as a one-pot meal, add in more bacon, sausage, pork mince or ground beef should make it more LCHF.

Replacing red cabbage with green onion or chopped zucchini will be interesting as well.

Directions

1. Rinse and dice the cauliflower to small chunks. Microwave for 3 minutes till softened.

2. Let the cauliflower sit and cool down for 5 minutes. Meanwhile chop the mushroom, bacon, red cabbage and celery.

3. Use a cloth or a strainer bag to squeeze the extra water in the cauliflower. Then rice it with blender or knife. 

4. Heat up a non-sticky pan to high heat and put in the shredded bacon. Stir-fry for 1-2 minutes.

5. Toss in the mixed vegetables and stirred for another minute.

6. Pour in a beaten egg and scramble into small pieces until cooked. Then add in cauliflower rice.

7. Keep tossing the mixture for 2 minutes. Add in salt, pepper and sesame oil.

8. Transfer to a plate or bowl and enjoy!
